My favorite Thai dish maybe this coconut lime soup with lemongrass and chicken. I had this for the first time in Dallas, where I ate a lot of Thai lunches and started to explore some Thai markets. Since then, I have eaten it in so many other restaurants, each with a different twist. One thing I love about this soup is that the basics of it are not tough and from there, you can put your own spin on it. Although traditionally NOT spicy, you can spicy it up, use other meats and vegetables, etc. One of my favorite Thai restaurants, Thai Soon (now closed) in Dallas, was a “Vegetetrian Seafood Restaurant” and served the best variety of shellfish, squid and shrimp Tom Kha.
The “Tom” means “boiled” as in soup, the “Kha” actually means “galangal”, a dried root which you can find at an Asian grocery, and “Gai” means “chicken”. So Tom Kha Gai is actually a chicken soup but you can substitute just about any meat or just use tofu.
If you really want to do it upright, you will have to work hard to find these ingredients – FRESH Kaffir lime leaf, Galangal root, and Lemongrass. Each have a special flavor that will make this Thai soup unique. The lime leaf can more easily be found dried but if you cannot find either fresh or dried lime leaf, you can just go with lime juice.
The Lime leaf can be more easily found dried but once I was in Berkeley visiting my brother and I walked into the asian market and was almost knocked over with the smell of lime – not lime juice, but the woody smell of the leaf. They were fresh and so pungiant.
The Galangal is a root that is sliced and dried (more rarely found fresh). Dried Galangal comes in plastic packaging and, in a zip lock, will last for a long time and should be able to be found in a good Thai or Vietnamese market. It gives your soup a citrus flavor that can only be found here.
Lemongrass is a must and can be found in a lot of grocericies today. It is a tall grassy bush (like pampus) with a bulb in at the base. Slice the white bulb end and disgard the grassy top. With all three of these ingredients, you will cook them in the soup but you will probably not want to eat them. Some people pull them out before service and some leave it all in for effect.
Ingredients
- 20 oz. Chicken Stock
- 1 Tsp Red Curry Paste
- 1/4 Cup Thin-sliced Lemongrass
- 1 Tsp chopped Garlic
- 1 Pc Galangal
- 2 Slices Fresh Ginger
- 2 Chicken Breasts, sliced thin
- …or shrimp or extra firm tofu
- Sliced Red Bell Pepper, straw mushrooms & bamboo shoots
- 20 oz. Coconut milk
- 2 Kaffir Lime Leaves
- 1 Tbl Fish Sauce
- Juice of 1 lime
- 4 Leaves Thai Basil
- Cilantro
Start by bringing the chicken stock to a boil and add the curry paste. Use less for not so spicy and more for a spicier stock. Dissolve the paste. Add the Lemongrass, garlic, galangal and ginger. Turn down the heat, cover and let this simmer for about 15 minutes. Now you have a good Thai stock that can be used for many different soups. Let’s make the Tom Kha.
Bring the heat back up and add the chicken. Let the chicken cook for about 30 minutes. If you are doing shrimp, you may add this in at the end of cooking for the last 5 minutes of simmer. If using tofu (make sure it is extra firm), cut into 1/2 inch cubes and add now. Add the vegetables.
Once this has simmered and has cooked the chicken (or simmered the tofu), add the coconut milk, lime leaves, fish sauce, basil and some cilantro. If you are doing shrimp (or any other seafood), add it now. Let this simmer for about 10 minutes and you are ready. Serve over jasmine rice and garnish with more cilantro.
